Wilson's Farm and Kitchen

 

Wilson's Farm and Kitchen exemplifies the story of the countryside from Field to Fork. Located on a family farm in the Scottish Borders the Wilson's offer pop up seasonal dining experiences sourcing the majority of ingredients from the farm, garden and close locality. These sustainable ingredients can often be measured in meters, not miles, and are lovingly put together to form delicious meals by Lucy Wilson and her team. Whether it's the 25 Mile Roast, Curry Nights or a privately chosen menu all can be enjoyed in the converted Old Stable or quirky 'Wee Tin Bothies' - (converted grain silos).

The Wilson's decided to invest in upgrading an Old Stable on their farm used for visitors to their award winning pedigree cattle herd. Offering farm tours since 2017 with a small food element, a Covid pivot happened when these weren't able to run. Lucy Wilson seized the opportunity to offer meals based on home grown ingredients and from other local producers on a collection basis. This has given the Wilson family an alternative route to market for their farm produce, a value added one, where they are the price makers, not takers.

One of the latest addition to the Wilson's offerings are three converted grain silos which have been upcycled to offer a novel dining venue for small groups. Realising in Covid their Stable, which seats 30, was going to be redundant for a while an alterative space was needed for people when they were ready to venture out again. The silos - or Wee Tin Bothies as they are known - have been enjoyed by many and even post the main Covid concerns are still being enjoyed.

There is large focus on quality in the Wilson's offerings, starting in the fields. The farm is quality assured with Scottish Quality Cereals and Quality Meat Scotland to give a further reassurance to guests, not they they need worry about what's lurking around the back of the sheds as a lot of the meals are also tied into a farm tour so they can see for themselves. This does also include sourcing from other local farms.

Wilson's Farm and Kitchen, has been able to provide opportunities for local employment and for local producers to trade with them, which will hopefully increase over the years. It goes without saying there are pressures on consumers to make more ethical choices towards their dietary choices. Catering for everybody, Wilson's Farm and Kitchen are confident they are very well placed to appeal to those looking for a true sustainable choice, one they can immerse themselves in and more importantly enjoy.
