Nominee Summary
This is a high-quality owner managed restaurant with rooms run by Iain Roden and Clare Winskill since 2012. They have developed a superb environmentally orientated business from a bed and breakfast hosted from two crofts to a tasteful welcoming quality restaurant with rooms, and a self-catering cottage. Iain is a self trained superb chef, sourcing local fish, meat and vegetables, and Clare runs the business side, being a welcoming host at front of house. They also run a wine business, supplementing Iain's sublime food with carefully sourced wines, and run bread making and wine courses. Our seventh year!
What makes your nominee stand out?
They were both professional lawyers (before that Clare was an intensive care nurse) and gave self-trained to be perfect and professional hosts, sourcing the region's top quality produce. They continue to build the business and innovate, adding a wine business, small wedding businesss, supported by other local businesses, and developing husband and wife team Andy and Kirsty who have bought a property locally. A truly unique hospitality business growing and innovating in challenging economic times .
Supporting the local community
In addition to developing their own business in this remote part of Skye in the Western Highlands, they support the local community through sourcing high quality local fish, meat and other foods and floristry and photography businesses in support of their small wedding business linked to Loch Coruisk. In addition Clare has several non-executive senior roles on Scottish hospitality boards, using her legal and business skills to promote the issues of Scottish businesses to Government.
Maintaining high ethical/environmental standards
Iain and Clare maintaining ethical and environmental standards through the sourcing of organic and quality produce and wines and the running of their business. Vintage furniture is recycled and upgraded.
